THE THREE CIRCLES OF HELLES

As part of a strain selection program at Ferveo Yeast, we tested the fermentation properties of hundreds of original genotypes. We then choose a few for their superior characteristics, offering brewers the opportunity to utilise different yeast according to beer style. With this collaboration with The Wheaty Brewing Corps, we wanted to showcase the impact that different yeast strains can have on beer. We decided on a brewing recipe that would enhance the expression of the yeast, and with the help of Flavour Logic and their expertise in beer sensory, we present the results in the form of these three beers!
